π Day

Yet another wacky holiday we celebrate in our house is Pi (π) Day. We celebrate it by eating pie. Although pies are circles, so it makes a certain kind of sense.

Since there was leftover chicken, I made a chicken pot pie for dinner. It was an opportunity to try out the pie crust recipe that I saw on America's Test Kitchen. The recipe uses vodka and water to make a very wet, easy to work with dough. The vodka evaporates during cooking and leaves the crust nice and flaky. I really enjoyed working with it. Although the uncooked dough tasted nasty.

There was a little dough left over, so I made a mini apple pie in the cute little pie dishes that Bryan's parents gave me for Christmas.

It was nice to be cooking again. Most of the time I merely heat (or reheat). I'm looking forward to a time when Gavin is a little less clingy.
